When I was young my favorite place to go to eat sushi was in a small hole in the wall sushi restaurant on the street corner. It had very little atmosphere and was filled with people who looked like they were high school kids. This is probably the reason why there was very little sushi I could ever get from this place. However, things have changed greatly and now the Sushi restaurant I used to go to almost every night is now a gourmet mecca. iruichirassai is similar to a fast food sushi restaurant. It s the same exact term, it simply is the contracted form of the Japanese word "iro" which means rice. The greeting at these places is not restricted to just the sushi bars or restaurants but you can often hear it at almost any store in Japan itself. This is probably due to the fact that the chefs there strive to produce only the freshest ingredients in regards to sushi etiquette.


Another great sushi restaurant in the Los Angeles area is the Oishi restaurant. The Oishi is also a gourmet sushi restaurant that creates everything from the maki (the filling) to the nigiri (the shrimp sushi). What sets this place apart from other sushi bars is that they use the traditional Japanese technique of creating the masago (fish cake). Their wasabi, which is a brown sheet of fish that goes with the sushi, is cut into strips before being deep fried. The quality of the wasabi itself is incredible; it tastes like it's been made right in front of you at the sushi bar.


The Oishi is located in Los Angeles and the chef is Kiyoaki. He came to the United States many years ago and worked for many years at a sushi restaurant in California. He learned Japanese words and techniques and has taken all those Japanese words with him to his new location. There is a high probability that you will be eating from the omakase section of any of these sushi restaurants in Los Angeles. Omakase is the translation for what is called "kaishiratte" in Japanese. If you order food that means "eat now". The chefs that usually make these specialty meals will slice the raw fish right next to the rice so that it looks like it is going to fall off the plate. One thing that really adds to the uniqueness of the omakase is the topping or the sushi vegetables that are actually placed on the fish.


Some of the most common vegetables include avocado, asparagus, carrots, eggplant, green beans and squid. As you can see, there are literally hundreds if not thousands of different items that a chef may use for this type of meal. The chefs may also throw in some California items such as sesame seed rolls and macaroni and cheese. While you are enjoying your meal you can help yourself by asking the chef questions about the dish. Because it is such a fusion style of meal, you can expect to learn quite a bit about preparing sushi from a good Japanese chef.
